CEREAL PRAWNS
(麦片虾)

In this video I am going to share with you a Cereal Prawn (麦片虾) recipe.
Crispy prawns tossed in a fragrant cereal mixture is a simple yet so deliciously satisfying dish. The added chilies and curry leaves give this dish that extra punch on every bite.
This is a popular and well-loved dish in Singapore and Malaysia. The combination of prawns and cereal gives you a tasty dish that is beyond your imagination
Recipe Notes:
I used large Tiger prawns in this recipe. You could use other types of prawn that you prefer. A typical Cereal Prawns recipe usually retain the prawns shell; but in this recipe, I decided to deshell the prawns so that the cereal can stick onto the flesh of the prawns rather than just their shells. I sliced the prawns from their underside to remove the prawn’s intestinal tract. Slicing the prawns’ underside this way will prevent them from curling up during cooking.
I used Nestle Nestum Cereal (original) in this recipe. You could use the honeyed Nestum Cereal or alternatively, you could also use those 3-in-1 ready-mix sachets (typically containing cereal, milk powder and sugar). Any of these is acceptable for this recipe.
I used Nestle malted milk in this recipe. You could use Horlicks malted milk or milk powder whichever you prefer. This can also be omitted if you are lactose intolerant OR you are using the 3-in-1 sachets.
I used seafood curry powder in this recipe. Curry powder is added to give more flavors to the prawns. You could use other types of curry powder that is available to you.
I used corn flour in this recipe. You could use sweet potato flour if you prefer.
I used 5 bird eye chilies in this recipe. DO NOT bite the sliced chilies if your heat tolerance is LOW. Alternatively, you could use 1 big red chili (deseeded and sliced) instead.
INGREDIENTS FOR CEREAL PRAWNS

(Serves 5-10 peoples)
✅️ 10 Large Prawns (±500 Gm), deshelled
✅️ ¾ Cup Nestum Cereal
✅️ 2 Tbsp Malted Milk
✅️ 1 Tsp Salt
✅️ 1 Tsp Curry Powder
✅️ 3 Stalks Curry Leaves
✅️ 5 Bird Eye Chilies, sliced
✅️ 3 Cloves Garlic, minced
✅️ 1 Egg (±60 Gm)
✅️ 50 Gm Butter
✅️ 2 Tbsp Plain Flour
✅️ 1 Cup Corn Flour
✅️ 2 Cups Cooking Oil (for frying)
METHOD OF PREPARATION:
Remove the curry leaves from their stem and set aside. Pat dry the deshelled prawns with a kitchen towel. Sliced each prawn from its underside to remove its intestinal tract. Slicing the prawns from their underside prevent them from curling up during cooking.
Mix the egg, salt, curry powder and plain flour in a bowl. Dip each prawn in the mixture and then dip into the corn flour to coat both sides lightly. Shake off any excess flour. Heat up the cooking oil in a pot over MEDIUM heat. Reduce heat to LOW and deep fry the prawns in batches to avoid crowding. Deep fry the prawns in the hot oil for 40 seconds and remove them with a strainer.
Melt the butter in a pan over LOW heat. Add minced garlic, curry leaves and sliced bird eye chilies and stir fry for 1min. Add the fried prawns and stir fry for another 1min. Switch off the heat, add cereal and malted milk to the pan. Tossed the prawns in the pan to mix well with the mixture. Cereal prawns are now ready to be served.
