In this video I am going to share with you a “Soy Sauce Chicken Wings” (酱油鸡翅) Recipe.
This finger licking good Soy Sauce Chicken Wings will surely win the heart of both young and old in a heartbeat. The chicken wings are so tender and juicy and have such a delicious mouthwatering fragrance.
Every parent has their own special Soy Sauce Chicken Wings that are loved by everyone in the family. This is my mum's special recipe.

Several notes here to share with you:
You could substitute Himalayan Pink Salt with white salt if you prefer.
You could substitute Raw Sugar with white sugar if you prefer.
Here is a quick rundown of the recipe:
(Serves 3-4 peoples)
1 kg Chicken Wings (7 pcs)
2 Tbsp Thick Soy Sauce (Cooking Caramel)
1 Bulb Shallot
1 Bulb Garlic
2 Tbsp Raw Sugar
1 Tsp Himalayan Pink Salt
50 ml Cooking Oil
250 ml Plain Water
Cut the chicken wings into sections with a pair of kitchen scissor. The tip of the chicken wing is not needed in this recipe. Discard or keep for another dish, if desired.
Rub the salt well on the chicken pieces and then set the bowl aside.
Chop the garlic and shallot into fine mince then set them aside.
Heat up the pan over MEDIUM heat until the oil is warm. Typically, this will take about 1 min.
Add the chopped garlic and shallot to the pan. Stir fry the mixture until they turn golden in color.
Add the chicken pieces to the pan. Stir fry the chicken pieces for about 5 mins to brown.
Add the thick soy sauce (also known as Cooking Caramel) to the pan. Stir fry the chicken pieces for about 2 mins to mix well.
Add the plain water to the pan. Stir the mixture briefly for about 1 min.
Cover the pan with its lid. Simmer the chicken pieces over MEDIUM heat for about 20 mins.
After 20 mins. Carefully remove the hot pan lid.
Add the sugar to the pan. Stir the mixture briefly to fully dissolve the sugar.
Simmer the chicken over HIGH heat uncovered to thicken the gravy. Occasionally stir the mixture briefly to avoid the bottom from burning. Switch the heat OFF when the gravy reaches the desired consistency.
Serve the Soy Sauce Chicken Wings while they are still hot. A warm bed of rice is a must!
