In this video I am going to share with you a Roasted Hasselback Potatoes recipe that goes well with roasted/baked meat, poultry or seafood dishes. This Swedish side dish gets its name from Hasselbacken, the Stockholm restaurant where it was first served. These accordion potatoes are not only fancy in their looks but taste great too. After the seasoning, the potatoes will turn out crispy on the outside and tender on the inside. Adding these to your main dishes will truly make everything more festive :-)

Several notes here to share with you:

  • I use chopsticks and lined them up parallel with the potatoes during slicing. This handy trick will prevent the knife from cutting through the potatoes. You could also use a wooden spoon instead of chopsticks.
  • I use chat potatoes which are essentially baby potatoes (they are smaller in size). You could substitute this with any other types of potatoes.
  • To vary the flavor, you could also add shredded cheese and bacon on top of the hasselback potatoes. Add these during the last 15 minutes of cooking time. Top this with sour cream and it is perfect as a side or starter.
  • I used a fan-forced oven set to 180 deg.C to roast the hasselback potatoes. If you have a conventional oven, the temperature would be 200 deg.C.

Here is a quick rundown of the recipe:

Ingredients

  • 500 Gm Chat Potatoes
  • ½ Tsp Salt (I use Himalayan Pink Salt)
  • ½ Tsp Black Pepper Powder
  • 50 Gm Butter, melted

Method of Preparation

  1. Place the potatoes in between chopsticks and slice the potatoes horizontally. Slice about 5mm apart leaving about 1.2cm at the bottom still attached (the chopsticks will help to avoid the knife from cutting through). The result will look like the accordion.

  2. Place the potatoes in between chopsticks and slice the potatoes horizontally. Slice about 5mm apart leaving about 1.2cm at the bottom still attached (the chopsticks will help to avoid the knife from cutting through). The result will look like the accordion.

  3. After 30 minutes remove potatoes from the oven. The layers of the potatoes should already be separated at this time. Sprinkle salt and pepper mixture on top and drizzle the remaining melted butter. Return the potatoes back to oven and continue cooking for another 30 minutes or until golden and crispy.

  4. Remove the potatoes from oven and serve hot/warm with the mains of your choice.

  5. Remove lobster tails from the oven and serve immediately. Enjoy lobster tails with creamy prawn sauce and with your choice of sides.

Happy cooking 😉🧡
