In this video I am going to share with you a Stuffed Pork Chops recipe and an Apple Sauce recipe that goes well with the dish. These pork chops stuffed with bread crumbs, apples, cheese and currants topped with a tangy apple sauce just make the meals served on any special occasions even more memorable. The aroma from the stuffed pork chop mix with apple sauce reminds me of a happy Christmas dinner :-)

Here is a quick rundown of the recipe:
Combine bread crumbs with apple, shredded cheese, currants, half cup of apple juice and melted butter in a bowl. Mix this bread crumbs mixture thoroughly and put this aside.
Using a sharp knife, make a pocket in each pork chop by cutting a slit along the fat side. Be careful not to cut through the meat. Sprinkle with salt and pepper on both sides. Arrange the stuffed pork chops in a roasting tray and fill the pocket in each chop with about 2 to 3 tablespoons of bread crumbs mixture. Pour the remaining apple juice into the tray.
Preheat the oven to 180 degree Celsius. Bake the stuffed pork chops for 40 minutes or until golden and cooked through.
To prepare the apple sauce, heat up 1 cup of chicken stock in a small pot at LOW heat; add the rest of the sauce ingredients. Cook to the desired consistency. Remove from heat and run the sauce through a food processor until smooth. You could skip this if you prefer a chunkier sauce.
Remove the cooked stuffed pork chops from the oven and serve warm with apple sauce and steamed vegetables for a complete meal.
